During our vacation to India last month, we went Cream center for dinner on my daughter's birthday.
A biryani mela was going on there and we ordered a chettinad vegetable biryani.

Ingredients of Tomato Biryani (Chettinad Style)
- It's 6 of tomato.
- Prepare 3 of Onion.
- Prepare 5 of Green chillies.
- Prepare 300 grams of Raw Rice Basmati rice /.
- Prepare 1 - 1/2 cups of water.
- Prepare of Mint leaves.
- You need handfull of Green Peas.
- It's 4 tbsps of Oil.
- Prepare 2 tbsps of ghee.
- You need 1 of Bay leaf.
- You need 1/2 inch of cinnamon.
- It's 3 of cloves.
- Prepare 3 of cardamom.
- You need 1 of star anise.
- It's 1 tbsp of fennel.
- Prepare 1/2 tsp of Turmeric.
- Prepare 1 tbsp of chilly Red powder.
- Prepare 2 tbsps of Masala Biryani Powder.
- You need as required of Salt.
Me and my younger co sister relished it each and every bite. Chettinad biryani is generally made with seeraga samba rice, since I did not have them I used basmati rice. The main aroma of this biryani comes from the seeraga samba rice, coconut milk and mild spices. However if you do not have seeraga samba rice, then use basmati rice to make this biriyani.
Tomato Biryani (Chettinad Style) step by step
- Divide the 6 tomatoes into 3-3. Take the first 3 and grind it to a smooth paste (Without adding water) and cut the other 3 into julienne. Soak the rice in water..
- Take a kadaai or cooking pot. Keep it on medium heat, add oil and ghee to it..
- Add all the ingredients given under "Tempering" ans saute until aromatic..
- Add in green chillies and chopped onions..
- Saute this until onions turn translucent, now add the chopped tomatoes and saute..
- Now add all the powders and salt and mix. Saute in medium heat until tomatoes turn soft and it should leave oil in its sides..
- Now add the ground tomatoes, this will be equivalent to 2 cups..
- To this add the soaked rice and discard the water and mix. Add green peas..
- Add about 1 and a 1/2 cup of water to this. Close this with a lid and allow it to cook in medium heat for 15-17 minutes..
- After about 15 minutes open the lid and check if the rice is cooked. Using a fork mix the rice and garnish it with chopped mint leaves..
- Serve it hot and enjoy it with your favorite raitha..
