Potato samosa in Bengali style step by step
- Firstly boil 75% of whole potatoes and then cut them into small chunks.(don't peeled).

- In a pan heat oil,add peanuts and fry it in medium-low flame for a minute, drain it and keep aside..
- In same oil,add roasted coarsely ground pachforon, saute it till aroma comes out,then add coarsely ground ginger-chilli paste,saute it for 2-3 seconds..
- Add boiled potato chunks,turmeric powder and salt,saute it for couple of minutes..
- Lastly add fried peanuts,mix it properly,put off the flame..
- Now samosa stuffing is ready, keep aside and let it cool down..
- Let's start to make a dough for crispy outer layer ;in a bowl put flour,carom seeds, ghee and salt..
- Mix all the ingredients properly, the mixture will turn crumbly.(as shown in fig).
- Add chilled water with spoon in small quantity and prepare a firm dough, cover the dough with wet clean cloth and rest it for 30 minutes..
- After resting time,knead the dough again for a couple of minutes, divide it into 6 equal portions and prepare round balls ; now take a ball,roll it into oval shape, cut from the middle and prepare two portions..
- Take one portion,apply water with finger on the straight side, overlapping one side over another,seal it by pressing and prepare a cone..
- Put 2 tbsp of stuffing in the cone, don't over fill it..
- Again apply water on the edges, press it properly with finger to seal the edges, prepare remaining samosas in same process.
- Heat sufficient oil in a heavy bottomed pan in medium flame,add samosas and immediately reduce the flame to low, don't over crowd the pan,fry till they turn golden brown..
- Serve hot with ketchup..
